Chop up your basil and put it in a freezable container..either zip lock bag or one of those plastic or glass containers. Add just enough oil to cover the basil. Olive oil is ok, but it will add it's own flavor, so if you don't want that particular flavor any vegetable oil of your preference will do. The Basil will stay as fresh tasting as the day you picked it! Just take out the amount you require and put the rest back up in the freezer. This helpful hint came from Gwen Barkley( a chef in her own right), the daughter of Madeline Hill. Madeline has been raising herbs longer than most of us have been alive, and she is still going!
