Hi Dave, Most organic coconut oils I've come across are the virgin oil, but there is some organic coconut available that is not virgin (I know that Spectrum, for example, has both varieties available). Extra virgin as opposed to virgin means nothing in the world of coconut oil. It just sounds good Then there is a difference between virgin coconut oils (VCO). There is a traditional method for producing it, which (in a coco-nutshell entails pressing the fresh coconut meat, heating it (low heat) and giving it a bit of separation/fermentation time. This one smells like lightly toasted coconut. There is also a centrifuged VCO available (know as Virgin Oil de Coco Creme by some). This one smells like a fresh cut coconut. Usually the traditional variety of the oil is less costly, not because it is necessarily inferior, but because the centrifuged oil takes a larger investment in costly machinery to produce it, and therefore producers have a larger investment cost to recoup and must charge a higher price for their product. I've carried both and like them both very much. Then there is the " how much can we possibly charge for this stuff " factor involved too And lastly ... the quantity you get it in.
