Guest guest Posted November 21, 2007 Report Share Posted November 21, 2007 Hi, I have checked some of the oils I infused this summer and noticed a layer of scum, like thick oil, on the bottom of a few bottles. If fresh, you probably did not get all of the water/moisture removed and have mold or another form of decomposition going on. If you infused with dry botanicals, but didn't filter well, it could be plant material settling, but this wouldn't usually appear like thick oil. Is it differently colored than the rest of your oil? Does it look cloudy? What does it smell like? A spoiled infused oil will smell rancid or like decomposing plant material. What fixed oil did you use? I would filter it, bring temperature to just under boiling (be careful not to burn) and let stand at approx. 180 degrees (use a candy thermometer) for 10 minutes. Cool and rebottle, but check to see if the same thing happens again. If you are going to sell this product, best to have an lab check it for purity. I used fresh herbs, and as you said, probably didn't get all the moisture removed. I was so excited to be making the different infusions, I just didn't wait. One of the infusions is cloudy, haven't smelled it yet. I always use olive oil and even added Vit E. I'll do some more checking on the different infusions. There is always more to learn!
