Guest guest Posted November 21, 2007 Report Share Posted November 21, 2007 Marcia, we have done our own Turducken about 4- 5 times over the yrs - my husband has actually deboned all 3 birds & made all 3 dressings/stuffings - it is wonderful - we have done it for open houses we have had - cutting into it - it is kind of like a jelly roll & & & & very tasty !!!! The original recipe is one of Paul Prudhommes & quite spicy - we adjusted the heat levels & it is GOOD!! I may have to make pumpkin muffins instead, too many lemons). I'm going to have to get up at crack of sparrow fart to cook the turkey tomorrow. Found the " smallest " one I could in Costco... at least that's what I tell Himself. I'm sure he's figured out by now that I lie like a RUG! This little tiny thing weighs 27 pounds UNSTUFFED. We're going to be pretty simple here, Just the Turkey, stuffing, yams, green beans and Cranberry Orange... Although for football I'm going to make chicken liver Pate. Can you say GARLIC? My friend Micki (recovering from breast cancer and feisty as ever with her new curly hair), Rob, me and my brother Bill. All adults. What a concept. Not so for Christmas, when it's my turn for the whole gang (I think we will be about 25 strong then, ages 6 mo. to 67.) So, tomorrow, I'm cooking Cornish game hens instead of the usual mammoth turkylurky. They will be brined tonight to be fat and plump when they go in the oven, stuffed with apples and raisins and smothered in a sauce made with olive oil, capers, balsamic vinegar, red wine, honey, allspice, chili powder, finely minced white onion, fresh sage, salt and fresh ground black pepper, a variation on a delicious recipe I got from a friend who grew up in Buenos Aires. Then, we'll have large Portobello mushrooms (grilled w/ a little olive oil) stuffed with wild rice and drizzled with a sweet pepper sauce. Sides of baked acorn squash and steamed brussel sprouts along with red pepper focaccia bread drizzled with garlic butter finally topple the table. :-) Dessert is a twist on the traditional pumpkin pie . . . With good homemade apple butter added (got this one from the Barefoot Contessa), topped with heavy whipping cream and sprinkled with chopped sugared pecans. My favorite holiday snack is clam dip with homemade potato chips. I do this for both Thanksgiving and Christmas. This is the simplest dip in the world, 1 can of minced (they have to be minced, not chopped) clams hand mixed (doesn't come out right using a mixer) into 1 pkg cream cheese, adding the juice as you mix to get the right consistency. Of course later, for the gang of 25, it will be many cans/pkgs. Rob and I have been following a food combining diet and this is waaaaay off the mark, so I expect perhaps to have tummy resistance, but it will be worth it. I saw a fabulous idea this week - I think it's called something like Turkyducken. It's boned turkey, stuffed with boned duck, stuffed with boned chicken with stuffing all around so when you slice it you get slices of all three birds and dressing all in one. You'd have to have your best butcher do the boning and stuffing for you, and I imagine that this one gets mighty expensive. Looked awfully good, though. And I'm baking a four layer pumpkin cake with a white home made frosting and a caramel drizzle, topped with chopped pecans. I think I'm gonna do the peach cobbler tonight too. The turkey will go in the oven around 5:00 AM. I have a very simple way of doing turkeys I wash em, salt em, and put butter, garlic, onion and honey under the skin and in the cavity, and brush butter on top, and add a cup of water to the pan. It's always moist and the meat is ready to just fall off the bone:) There's never any left over. Not even enough to make sandwiches with on Friday! We're having maple glazed carrots, fancy potato salad(which means it just has sliced black olives, pimentos, garlic, onion, and a little thyme added to it). I do a pralined sweet potato dish with a crumble top, every year.( I can't get away with not making it. I tried this year, hehehe, and everyone said he** no, that's the exact expression!;>) Corn on the cob. Pan fried green beans with a garlic sauce. Mashed potatoes made with turkey stock, green onions, garlic, and cheddar cheese.(My granddaughter insists on mashed potatoes, LOL) Deviled eggs And last but not least a green bean casserole. (This one is the one my son in law insists on) For appetizers: They're do it yourself this year;) I have two platters of Ritz crackers and a cheddar/red wine cheese ball and a ranch/ cheddar cheeseball, some summer sausage, and cut up veggies. That's all I can handle by myself this year. My daughter has to work this Thanksgiving and Grandma isn't going to be here. Usually we also have a big pot of collards with ham hocks, and a three bean salad and maybe a pasta salad. Biscuits and rolls, A ham or a roast, and whatever grandma brings(which is three or four dishes of whatever she decides to make). So we're a little lean this year, LOL. Marcia that's a turdunken. We have to have turkey mommy! " Plus it was a lot less expensive to go with the free turkey rather than the prime rib and lobster {grinz}.. so turkey with all the trimmings traditional trimmings it is! Oyster stuffing, squash, roasted root veggies, broccoli and cauliflower (I got the cutest purple, orange and green flowerettes)! I wasn't able to get the pie crust I like made without shortening, so I have to make a crust tonight and bake my pie pumpkin that I got from the pumpkin patch last month Then I'm going to make the leftover turkey into all kinds of things that I am able to pressure can. Now you all have got me excited to try this - another family tradition in the making!!! And, of course, I'd rather make my own than shop at Wal-mart. Almost rather eat worms than resort to Wal-Mart. Did you all know that Wal-Mart takes out life insurance on its employees? Benefits to the corporation, of course . . .. There is a staff who searches all the social security number deaths to keep up the collections. Sick. But, on to better thoughts. Hmmm. Wonder if you can do a similar thing with fish???? Fish and shellfish? Which reminds me of another great recipe. Make a paste of equal parts of butter and canned shrimp, thickly coat cut up chicken parts and bake. The shrimp will make a thick crust (moist inside) and the combination is exquisite. Really rich and filling. And fattening, of course, but we won't mention that. Have a great one. Yes, I'm really off to the house/kitchen now. I want to try something I've never done before. And the turdunken fits the bill nicely:) And the green beans are great! I made them for the first time last year. I had them at a restaurant, and searched around on the net until I found a recipe that was as identical as I could get it:) I am addicted to green beans done this way:) You just use enough sesame oil to keep them from sticking, so they're not at all greasy. And the garlic sauce is very easy. Yep, I'm hunkering too, I just take a break now and then, and check my email, LOL. I just bought a convection/microwave oven a month or so ago, so I'd have more cooking at one time. Yay! Cuts cooking time in half, LOL. It's been a great little oven. If anyone is interested it's a Half Time oven(That's the name of it, he) I bought it from Wal-Mart online. They don't have em in the stores. They shipped it to the local store free and all I had to do was print out my email notice, and go pick it up! It's a little larger than the average microwave but it still can hold a turkey. I don't like microwaving anything too much, but it was the biggest convection oven I could find for the price:) It cost me 198.00 plus tax. It's got a half time cooking setting too, which I haven't used yet. That's why they call it a Half Time oven:) It's supposed to take half the time to cook whatever. Guest guest Posted November 22, 2007 Report Share Posted November 22, 2007 Here ya go:) Pan-Fried Green Beans 1 pound fresh green beans, trimmed 3 tablespoons light soy sauce 1 tablespoon balsamic vinegar 1 teaspoon white sugar 2 tablespoons sesame oil 2 teaspoons minced garlic Place the green beans in a large saucepan or pot with one inch of water. You may place them in a steamer insert if you have one. Bring to a boil, cover and cook for 5 minutes, they should still be firm and bright green. In a small bowl, stir together the soy sauce, balsamic vinegar and *sugar; set aside. Heat the sesame oil in a large skillet over medium heat. Add garlic and cook until it starts to brown. Add the green beans and stir around to coat them lightly with the oil. Stir in the soy sauce mixture and simmer for a couple of minutes uncovered to reduce the sauce. Transfer the beans to a serving dish and pour the sauce over them. *You can use Stevia in place of the sugar if you prefer. Praline Sweet Potatoes 4 cups mashed sweet potatoes 1/2 cup white sugar 2 tablespoons vanilla extract 4 eggs, beaten 1/2 pint heavy cream 1/4 pound butter 1 cup packed brown sugar 1/2 cup all-purpose flour 1 1/4 cups chopped pecans Butter one 2 quart casserole dish. Preheat oven to 350 degrees F (175 degrees C). In a mixing bowl, combine the sweet potatoes, sugar, vanilla extract, eggs and cream. Blend well, and spread evenly in casserole dish. Prepare the topping by combining the butter, brown sugar, flour and pecans. Mix until crumbly, and sprinkle over sweet potato mixture. Bake for 30 minutes in the preheated oven. This is very rich and sweet. It makes 6 servings. I don't always use heavy cream. I've used skim milk and it turned out very well. You can play with the ingredients a bit if you're experienced in cooking, LOL. Just hold back your milk or whatever for the potato mixture and add it last as you mix, so it doesn't get too soupy. You can cut the sugar back if you like or use Stevia instead like I do. But you'll have to make up for the lack of the sugar volume extra flour I guess. But it's the brown sugar in the topping that gives it the praline flavor along with the pecans. Though I have used Walnuts and even almonds in a pinch. There's just about no way this one can't turn out well unless it's too soupy when it goes in the oven:) Make sure your topping is crumbly, it shouldn't be tacky at all, it'll look like white gravel of different sizes. If it's at all sticky or tacky add some flour just a tiny bit at the time until it's crumbly and soft, but not sticky or tacky. If you've done crumble top pies or any kind of fruit crisps you know what I'm talking about:) That's all it is really, a crumble topping made with brown sugar instead of white and added nuts. - AlladinG Wednesday, November 21, 2007 9:07 PM Re: Anyone else cooking? can you share the pan fried green bean & garlic sauce recipe??? Doggone good thing too--I wrecked my back last night when I had to pull my boyfriend's dad from between his bed and commode! He's 90 and on oxygen, so he's mostly bedbound with someone standing by when he gets up, but he got cocky last night and got up by himself ...and went down by himself, THEN yelled for help. I'll be making friends with a good MSM lotion today--thanks, Vickie! We're going to my sister's home a few miles away. We got wonderful news yesterday.....my Mom's CT scan showed her lung cancer has NOT spread and has shrunk from a 5 cm mass to a 1 cm! Made Mary Dee's Dixie Biscuits last night, so watching the Local Thanksgiving Day parade on TV....Some of my students are participating. 2 days ago it was 70 this morning it's 20, they look chilly. I will make a Turkey Day dinner for my children on Sunday, they hate going somewhere else and not having any of the leftovers.
