I have become so intrigued by this berry that I just ordered two elderberry bushes (Sambucus Canadenis, varieties York & Nova). I imagine, however, it will be a couple of years before I have enough yield to make my own syrups, extracts, teas and baked goods. (What a wonderful sounding pancake syrup or fruitbread!) I also understand I will be in competition with the birds as they love them as much as we do! I guess I'll have to net my plants (anyone have other suggestions?) " Well, we take it usually when we feel something coming on; about 2-4 tsp several times per day (kids 1/2 -1 tsp. several times per day). It is good to take as a preventive also by the spoonful daily. " how long does it keep? " I recommend storing in the fridge and it shall last for several months this way. Funny you mentioned using it as a pancake syrup! It won't be for a couple of years, but I'll definitely let you know how any food recipes turn out. And I'm anxious to try making my own extracts/teas/syrups too. I've told several friends about it...
