The fact that they do this in a Kingdom where possession of alcohol is a serious offense is one of the most well publicized secrets in the Kingdom .. the Gummit folks turn their heads as long as the Ex Pats don't drink outside their compounds or go outside their compounds smelling of alcohol. ;-) Point is .. they have always used grape juice .. they order it in very large amounts .. and they all seem to have a sweet tooth cause they also order a lotta sugar. Basically.. again .. I say basically because this is not a step by step recipe .. just advising that it can be done and some folks do it well.. they mix the grape juice with two parts water .. the less water you add the stronger the wine will be. Then they mix in as much sugar as they want based on the sweetness desired .. figure a tad less than a pound of sugar to a gallon of liquid and you'll be in the ball park. When you add sugar it makes the water-grape juice mixture cloud up a lot .. and it will cloud up more over the next few days. Then they add yeast .. best as I can recall it was like two of the small packages for 5 gallons of liquid. Then they put it in a plastic container and poke a hole in the lid to let the carbon dioxide escape. Its hard to describe the size of the hole but if you make it around the size of a pencil lead you are in the ball park .. and the hole should not be blocked. If the hole is too small the wine will be lousy .. if the hole is too big .. you wind up with vinegar. Depending on your taste .. the wine will be " drinkable " in 2 or 3 weeks. Would I follow the instructions I laid out above? If I had to I would but even then I'd not make more than a half gallon or so to see how it came out. Odds are good I'll make Blackberry Wine next year but I'm gonna get far more detailed instructions afore I waste my Blackberries. But ..
