I'm sure that many of you that celebrate Christmas are busy with your last of the minute preparations. Tonight we are having my side of the family gathering for what I call a Traditional Scandinavian meal. About 20 folks will gather for this feast! Yep, Lutefisk and Swedish Meatballs. Mashed potatoes and all. The Lutefisk is enjoyed by only a handful but the meatballs all 8 pounds will most likely be devoured by the rest! I use recipes passed on from my mother - a full blooded Swede. Due to work schedules we won't celebrate with our own sons and their families until Saturday, then we have our Own Tradition - My kids favorite an old fashion Pot roast - slow cooked with potatoes, onions, cabbage, carrots and oh so nummy! Pumpkin pie for dessert! Of course we diffuse several different essential oils during this time to bring us back to childhood. Namely some fir and Pine needle oils since we use an artificial tree. But other scents are used in other rooms too. Well, enough of reminescing I need to go bake the pies and get the table ready before I have to do the rest of the cooking!! Merry Christmas to All!!
