In the case of bitter almond EO, means pulling out the prussic acid, aka hydrogen cyanide... In a broader sense, it could be thought of as making the EO safe, or " right " ..... Bergamot with out the process is highly phototoxic, as are some other citrus oils (but less so)....... You can source it either way...
