Guest guest Posted June 13, 2009 Report Share Posted June 13, 2009 I'll start the summer recipes with one of my faves - my loose peach jam recipe Not that the jam is loose, the recipe is loose LOL You'll need 1 part peaches (pitted, blanched, peeled and chopped) to 1 part sugar and some lemon juice. Note - I find that using all organic ingredients make a noticeable difference in this one Place the peach fruit and lemon juice in a pot, bring to a boil. Mash the fruit to desired level of chunkiness. Add the sugar, bring back to a boil, then reduce heat, simmering lightly for about 15 minutes. To test for readiness place a small spoonful of the jam on a very cold plate and see if it sets up enough. If it is too runny simmer a bit longer until ready. Place hot jam in canning jars, seal the bands tightly and invert the jelly jars for 5 minutes. Turn jars upright and pop the centers of lids down to seal.
