There are dozens of different kinds of kimchi and there are a lot of recipes on the Net .. one is about as good as the next .. but I'll just mention three things. Almost all of the recipes call for lots of hot pepper .. the amount listed in most recipes is pretty high but keep in mind that the hot peppers in most Asian countries are generally not as HOT as some we have in North and South America .. so you might wanna go a little light on that unless you want to breath fire like a dragon. Secondly, some recipes say any old cabbage will do .. in my opinion that is not the case. I find that Bok Choy (Chinese cabbage) is the best because it will stay tender rather than toughen up when you make kimchi. We grow it in our garden .. its easy to deal with. Finally .. all fish sauce is not equal. Though it is easier to find Thai or Filipino fish sauce .. I think its worth your while to try to locate some Vietnamese nuoc cham (which most GIs called nook mam). It is great for making kimchi and for dozens of other uses when fish sauce is called for. When I make kimchi I use a LOT of garlic and onions .. and radishes.
