Guest guest Posted June 28, 2009 Report Share Posted June 28, 2009 Wanted to thank you, Chris, for bringing up the brief kim chi thread. It re-awakened my love of this side dish. When I lived in AZ, I had a Vietnamese friend who's little girl played with my 2 little boys. She made home-made kim chi, and I was so impressed and she'd always make me a fresh batch. She got a kick out of this blonde girl from Calif loving her kim chi, I think. I haven't had it in a while, and used to buy it ocassionlly from the grocery. Well, I tried my first batch, using Butch's suggestion for the napa cabbage. It turned out great, except I was too heavy-handed on the pepper spice. I almost couldn't eat it, it was so hot! But managed to choke it down, lol, cuz it was so good. My second batch has been soaking in the salt water overnight, and will be put together today....with a bit less pepper.
