Some are gathered for the flowers , others for the herb itself and still others for the roots. No matter what you need the best time to gather is after all the night dew has dried. After gathering either tie in small bundles and hang or spread on a screen to dry. Keep out of direct sunlight. I personally dry my herbs in a dark room with a fan going for circulation. Heat and light are the biggest enemies of your herbs. leave them whole if possible and cut, grind or chop as needed. They hold their potentcy better when whold. Brown bags are a good way to store herbs just fold the top tightly and use a paper clip. Doris > When is the best time to harvest herbs for drying?
