You would no doubt want to remove any seeds or pricklies, and remember that too many rosehips can cause diahrrea. I think I would mix with other berries, but thinking of trying this myself. As a craft idea, you might consider stringing them with popcorn and cranberries as Christmas tree decoration. You can make jam with them but you have to cut them in half and take out all the seeds and the blossom and stem ends. Much easier to make the jelly. If you call the Certo hotline they will give you the recipe. I used the same recipe but with a different brand of pectin and it didn't jell but made wonderful syrup.
