Guest guest Posted August 30, 2009 Report Share Posted August 30, 2009 Herbs, especially the aromatic ones, are best picked for drying when they are just mature, i.e., lavender when the buds are beginning to open. Aromatic herbs like spearmint, rosemary, ones you want the leaves from, you should definitely pick before they start to flower as the leaves will lose some of the aromatic strength during and after flowering. They are all different. If you keep removing flowers, a plant will continue to grow, and it dies back after it flowers and produces seeds.
