Is it necessary to blanch all veggies before drying ? I'm putting some cauliflower in the freezer and also want to dry some. Do I need to blanch it before drying or can I just cut it and spread to dry in the dehydrator ? Guest guest Posted October 24, 2009 Report Share Posted October 24, 2009 Someone once told me that blanching helps to keep the food from tuning dark once dried and over the time stored. I just got done doing ten pounds of onions the other day. Beyond washing them off before dicing everything. I didn't do anything unusual. The dried onions look the same as store bought dried onions. Kinda brownish and definitely dry. Since I just found my dehydrator after doing the onions. I'm now planning on buying a few bushels of apples and drying them up. I may treat them with ascorbic acid first, to retain the looks. I will definitely not blanch them. When the apples are dried. I'm going to start on potatoes and carrots.
