Does any one here dry fruits & veggies ? I'm in the middle of drying a lot of

fruits & veggies and have a question. Is it necessary to blanch all veggies

before drying ? I'm putting some cauliflower in the freezer and also want to dry

some. Do I need to blanch it before drying or can I just cut it and spread to

dry in the dehydrator ?

I never do. Just slice and pout in the dehydrator.

Someone once told me that blanching helps to keep the food from tuning

dark once dried and over the time stored.

 

I just got done doing ten pounds of onions the other day. Beyond washing

them off before dicing everything. I didn't do anything unusual. The

dried onions look the same as store bought dried onions. Kinda brownish

and definitely dry.

 

Since I just found my dehydrator after doing the onions. I'm now

planning on buying a few bushels of apples and drying them up. I may

treat them with ascorbic acid first, to retain the looks. I will

definitely not blanch them.

 

When the apples are dried. I'm going to start on potatoes and carrots.
