I don't blanch (except vegetables) normally unless I want to freeze. I run the

vegetables and fruit through a food mandolin - julienne, fine fulienne or

circles or flat cut and then dry.

 

I am never without at least 10 vegetables (other than the bean family and there

are about 6 or more of them) in my pantry. I buy any time the vegetables are

cheap and dry them paper-dry so I don't get any moulds. The only vegies I don't

dry are a range of mushrooms. I buy them from a great wholesaler.

 

I do the same with my fruits and I have about the same number of different

fruits in the pantry. I look after wildlife so can't be without a ready supply

of fruit. I also make my own muesli so I do need lots of fruit.

 

I prefer to dry my fruits and vegetables as freezing takes up too much room. I

need my freezer for all my bulk cooking.
