Rancid Oil ??

The shelf life of the butter in particular is rather short and should be

used up between 3 and 6 months. Contrary to many " facts " and out right lies,

vitamin E is no preservative.

Lecithin is another way to prevent oils from becomming rancid.  Something from

an old Adele Davis book.  Years ago, back when I used oils more than once for

frying, I would squeeze in a capsule or so of lecithin to keep the oil fresh

(refrigerated after 1st use of course)..........and it also helps make gravy not

be so fatty.  Been years since I've thought of it and memory not what it once

was.  Not sure what the current theory is about lecithin.
