Fruits are defined as the fleshy covering of seeds, which don't necessarily have to be soft. For example, an acorn is a fruit. Although bananas no longer contain seeds, at least the ones you get in the store, that is because of breeding by humans over thousands of years. You assertion concerning the fact that bananas are not trees (which is true they are herbs) has nothing to do with the classification of fruits or seeds, etc. tomatoes are fruits, so are squashes.
