Ropa Vieja

 

Modified to vegan - using shredded/ground beef analogue

 

This is a dish common to the Spanish speaking parts of the

Caribbean. The name means old clothes, and there are at least two

versions of how it came to be named that way. One says that the

shredded beef looks like tattered clothing, and the other (my

favorite) suggests that you should only wear old clothes when you eat

it, because it is so tasty that in your enthusiasm you will surely

make a mess.

 

2 - 3 12 oz packages of vegan beef analog, preferrably shredded

(comes frozen) - or - tvp

1 large carrot, sliced

1 large turnip, peeled and diced

1 large onion, chopped

3 Tbs (45 ml) olive oil

3 cloves garlic, finely chopped

1 green bell pepper, seeded and chopped

1 tsp (5 ml) hot chili pepper flakes (or to taste)

2 cups (500 ml) chopped fresh or canned tomatoes

2 bay leaves

1/4 tsp (1 ml) ground cinnamon

1/8 tsp (0.5 ml) ground cloves

2 cups vegatable stock (or 2 vegetable bouillon cubes dissolved in 2

cups of water)

Salt and freshly ground pepper to taste

 

Heat the oil in a large heavy skillet and saute the onion, carrot,

turnip, garlic, bell pepper,

and chili pepper flakes until the onion is tender but not browned.

Add the remaining ingredients and cook until thick and well blended.

Add the shredded beef and the stock. The

dish should be somewhat soupy but may be thickened with some bread

crumbs if desired. Serves 6 to 8.

Welcome to the list, Maida, and thanks so much for posting the recipe for

Ropa Vieja! It's something I have never tried, so I shall certainly give it a go

sometime soon. Do you cook a lot of things from that region? Or are you like

me and try things from all over!

 

I hope you will enjoy the list. Just barely getting started right now, but it is

already growing. With members like you, it should be a great success!
