Just slice a few ripe bananas lengthwise and place on a greased pan. Pour fresh orange juice over the bananas (I believe frozen will work well too). Mix ground cinnamon with a little brown sugar and sprinkle over bananas. Top with roughly chopped cashew nuts. Bake at medium for 20 minutes (microwave is not the same...) Guest guest Posted May 21, 2004 Report Share Posted May 21, 2004 This is verrrrry good - I can attest to that - its a favourite 'quick' dish that you can throw in the oven while you are doing something else - like finishing the main course ;=) or opening another bottle of wine *lol* Julia Child used to have a version of this in one of her cookbooks - substituting a little bourbon (would you believe) for the orange juice and, perhaps, peanuts for the cashews - no cinnamon, as I recall. FYI, in the book I have now, she suggests cider, dry white wine or dry white vermouth and honey instead of sugar. Me? I like Mirian's verson best!!! Thanks for reminding me - I used to make this and had forgotten about it!!
