Guest guest Posted May 23, 2004 Report Share Posted May 23, 2004 A lot of people think curry comes from the " Curry berry " in fact is just a potpourri of spices ground. These did not come across in the previous email because I posted it in HTML. So I have cut and pasted the text. Curry is categorized as mild, hot, and very hot. A standard curry powder will include: * Turmeric * coriander * Cumin * pepper (essential) * Cloves * Cardamom * Ginger * Nutmeg, * tamarind and chili pepper It may be further seasoned with: fennel, caraway, ajowan, ginseng, dried basil, mustard seeds, and cinnamon. In a large dry cast iron skillet. Add all ingredients and toast lightly. Grind to a powder in a coffee grinder. Mixed Vegetable Curry 2 Teaspoon Canola oil or Soy Marg. 2 C chopped Onion 3 garlic cloves 4 Tablespoons Curry powder 3 Cups Carrot Chunks 3 cups green beans 2 Cups cubed potatoes 2 Cups tomato Wedges 1 Cup Peas Any other assorted fresh veggies Salt to taste I a large sauce pan or Skillet heat oil / Marg over medium heat. Add onions and Garlic, cook and still till onions are transparent about 2 minutes Stir in Curry Powder until absorbed into onion. Add rest of Veggie and cook till tender. Mushroom Curry 1 lb Button mushrooms 2 green chilies 1 onion 1/2 tsp chili powder 2 table spoon curry powder 2/3 cup Coconut Milk 2 tablespoons Soy Marg. 2 bay leaves Salt to taste In Skillet melt soy Marg, cook onions and garlic. Add curry powder, cook with onion till absorbed. Add Coconut milk and green chilies. In a separate skillet cook mushrooms for about 3 to 4 minutes. Add to mushrooms to Spice mixture server hot and Garnish. We need to evolve to a point where we realize killing animals is killing us (health and environment) and that killing them is wrong. Then maybe at that point we might realize that killing each other is wrong. The addition of coconut milk to the mushroom curry is a must - and makes such a difference to the taste and texture of some curries. About your ingredients for your curry powder - and good for you, like all good cooks, making your own! - can you give our members some idea of proportions of each? Obviously each cook/chef adjusts the exact proportions and contents to suit him/herself as a basic house curry powder and then adds (as you show in your mushroom curry recipe) a little of this and that to make it different for each dish, right?
