Guest guest
This was originally a chicken recipe. I've been a vegetarian for over thirty years and often replace flesh with tofu. Some recipes work; some don't. This one's not bad. TOFU SATAY with SPICY PEANUT SAUCE and CUCUMBER RELISH Ingredients: 1-pound TOFU Bamboo skewers, soaked in cold water Marinade: 1/2-cup coconut milk 1 T. vegetarian oyster sauce 2 tsp. red curry paste 1 tsp. brown sugar 1 T. chopped cilantro 1/2 tsp. ground turmeric Peanut Sauce: 1-cup coconut milk 3 T. red curry paste 1/2-cup chunky peanut butter 1/2-cup vegetarian chicken-flavor bouillon 1/4-cup brown sugar 1 T. fresh limejuice 1 tsp. sea salt Cucumber Relish: 1 large Japanese cucumber, peeled, halved and thinly sliced 2 shallots, thinly sliced 1 small Thai chili, thinly sliced 1/3-cup white rice wine vinegar 2 tsp. brown sugar 1 tsp. sea salt Cilantro leaves, for garnish In a bowl, combine all the marinade ingredients. Slice the tofu into strips, 1 " x 3 " x 1/2 " , and add to marinade. Turn to coat, cover and refrigerate for up to 4 hours. Prepare the sauce: Bring the coconut milk to a simmer in a small saucepan. Whisk in curry paste until dissolved, about 1 to 2 minutes. Whisk in peanut butter, stock and sugar, reduce heat and cook until smooth, stirring constantly, about 5 minutes. Remove from the heat and add limejuice and sea salt. Set aside to cool to room temperature. Prepare the relish: Place cucumber, shallots, and chili slices in a small bowl. Heat vinegar, sugar, and salt in a small saucepan, stirring, until mixture reaches a boil and sugar is dissolved. Remove from the heat, cool to room temperature and then pour over cucumber mixture. Garnish with cilantro leaves and set aside. Prepare the grill: Thread marinated tofu onto the soaked bamboo skewers. Place on grill and cook through, turning once. Serve with peanut sauce and cucumber relish. Jim " The statistics on sanity are that one out of every four Americans is suffering from some form of mental illness. Think of your three best friends. Guest guest
Oh wow, this looks yummy. I realize that it will lose 'authenticity' but I'm leaving out the cilantro because, well, I HATE the stuff.
