Guest guest
This one too was orginally a chicken dish. It's one of my favorites. Tofu Cacciatore Tofu 2 Tbs. Olive Oil 1 Medium Onion, Chopped 2 Cloves Garlic, Minced 1 Celery Stalk, Chopped 4 oz. Mushrooms, Chopped ½-Cup Dry White Wine 1 (14 oz) Can Chopped Tomatoes ½-Cup Vegetarian (Chicken-flavored) Broth 1 Tsp. Dried Oregano 1/4 Cup Fresh Chopped Parsley Salt & Pepper Pinch Of Red Pepper Flakes Press the tofu and cut into pieces. Heat the oil in a large skillet over medium heat, and brown the tofu pieces well on both sides. Remove the tofu pieces to a plate. Add the mushrooms, onions and celery to the pan, and sauté until soft, about 5 minutes. Add the garlic, and cook another minute or two. Return the tofu to the skillet, then add the white wine. Cook on medium heat until the wine has almost completely evaporated. Add in the chopped tomatoes, broth and seasonings. Simmer, covered for about 30 minutes. If the sauce has not thickened, remove the tofu pieces from the pan, and bring the sauce mixture to a boil. Cook a few minutes until it has reduced and thickened. Serve hot! Guest guest
This looks excellent, Jim ;=) I'm much amused at it's name too - what a delightful contradiction in terms! gf
Guest guest
Yes, I suppose 'Tofu hunter' is a rather queer name for a dish. lol Jim " A sunset is not an ending, but a pause before a fresh start " . , " greenfury2004 " <greenfury2004> wrote: > > This looks excellent, Jim ;=) I'm much amused at it's name too - what a > delightful contradiction in terms! > > gf
