Asian style spicy slaw

Asian style slaw

 

1/2 small head chinese cabbage, cut into thinly shaved slices

1/2 red bell pepper, matchstick slices

1/2 peeled english cucumber, matchstick slices

1 large peeled carrot, matchstick slices

1 bunch cilantro, leaves stripped from stems and chopped

1 bunch basil, leaves stripped from stem and chopped

 

Combine all ingredients in salad bowl.

 

Dressing

 

1/4 c raw almond butter (for raw foodist version) or all-natural

peanut butter (for vegan version)

juice of 1 lime

1 T shoyu sauce

1 T maple syrup (or 3 dates, soaked and pitted, for raw version)

1 T grated fresh ginger

1 clove garlic, pressed

1 T minced serrano pepper (or hot pepper of choice)

Pinch of celtic sea salt and freshly ground black pepper

1-2 T water

 

Combine all ingredients except water in blender. Process through all

speeds to desired consistancy. Thin with water by tablespoonfuls

until desired consistancy is reached. Pour over salad ingredients,

toss to coat. Enjoy

Thanks Monica, those sound great. For two years I was a fruitarian,

then only raw fruit, vegetables and nuts; it was too hard to maintain

that diet with the job I had then, but I sure did feel good and had

plenty of energy.

Wow! Jim, I'm impressed! I admire anyone with that much self

discipline. I studied nutrition for many years, before I went raw,

so I try to keep a balance of fruits, veggies, nuts, seeds, sprouts,

etc. and occassionally admit to beans and grains. (for protein) I

like to eat 50+% raw each day. I hope that doesn't make me too

weird. Yes, I do feel good too, the higher my percentage of raw

foods. Every creature on this planet except humans and the animals

we domesticate eats raw food. And every animal except humans and

domesticated animals is free of degenerative disease throughout

their lifespans. Makes one think, doesn't it?

You guys are amazing w/regard to discipline. Before joining this group, I

didn't even know people did such things(fruitarian, just raw foods, etc.). Yes,

it DOES make you think. Beth
