Guest guest Posted June 4, 2004 Report Share Posted June 4, 2004 VEGETABLE WHITE CURRY - SRI LANKA (Vegan) This curry will take just about any vegetables you want to use - these are suggestions only. It is quick and simple and tastes delicious. This recipe is for two persons, but you could make it in any amount. 1 can (about two cups) coconut milk 2 to 6 fresh green chilies (to taste, depending on `heat'), roughly chopped 1 onion, chopped 3 cloves garlic, chopped, 1 Tbsp grated ginger 1 stalk lemon grass (or, if not available, use strips of lemon zest) 10 curry leaves 1/2 tsp turmeric 1 stick cinnamon 1 lb of a mix of the following vegetables, thinly sliced: zucchini, yellow bell pepper (capsicum), broccoli florets, carrot, potato. salt to taste Place all ingredients in a saucepan over high heat, bring to boil, reduce to a simmer and cook for around 10 minutes or until vegetables are done.
