My name is Alexandra, I am 30+ years old and live in Europe.

I joined the list in order to find recipes for loosing weight.

You know what the doctors say: " Eat less meat, eat more vegetables! "

In this connection allow me one question: Why does cooked vegetable always look

so worn-out? You buy it, bring it home and it looks so wonderful, so fresh.

Then you cook it.

What am I doing wrong?

Welcome ;=) Nice to have you here and excited at having a new vegetarian in

our midst - or at least a wannabe *lol* Vegetarianism is an *adventure*!!!

Alexandria (gotta watch these names *lol*) is probably right: overcooking

vegetables is a major problem - and why so many people say they don't like

doing without me*t - they would like veggies better if they knew how to cook

them properly. they should be *just* cooked through - not cooked until soft in

the European manner. No offense meant there, btw: I'm originally from the UK

myself, the home of the seriously mushy vegetable, at least in the past and in

the present among my relatives! :=) My son and family live in northern Europe

- and they don't do much better :=( although they are very fond of good crisp

salads.

And that, of course, would be another way to go - lots of good crisp salads.

They can, of course, as people here have noted, have wonderfully varied

dressings on them, some of them very spicy indeed and some just moderately

so. Check out our files and see what you like. Bear in mind, of course, that

we've only been going for three weeks and a day, so we haven't as many

recipes as we should have later on!

Let's talk more about this a little later when you've had a chance to check

things out, okay?

cheers!

ROFLMAO Why not - everyone is joining up everywhere! And, so there are

no misunderstandings ;=) I should add that Alexandria, in suggesting this,

knows perfectly well that I co-moderate that list ;=) Thanks, Alexandria!

So, if anyone want to come and try out Vegetarian Slimming too, they would

be most welcome. (It is *not* a high-volume list.) Some low-fat recipes there -

although of course recipes can be adapted to low fat ;=)

*giggle* Seriously, it's the only veggie list I'm on that is aimed that

way. I know there is a list called " fat-free " but didn't have that link

handy when I made that post. /

and http://www.fatfree.com/ are the other lists I'm thinking of. If it's

okay to post other lists? Anyway, there's a great archive of recipes at

http://www.fatfree.com
