Guest guest Posted June 8, 2004 Report Share Posted June 8, 2004 Eye Poppin Chili Eggs 8 oz can green chili peppers, drained 5 oz monterey Jack, cubed 5 oz Cheddar, cubes 8 large eggs, beaten 12 oz salsa 1/2 cup shredded cheddar salt pepper 1 Grease the inside of a 9 X 9-inch baking pan and preheat the oven to 350°F. 2 Line the bottom of pan with chili peppers. On top of that place the cubed cheese and 8 ounces of the salsa. Pour the beaten eggs over this. Mix 4 oz of salsa with the shredded cheese and put on top of the eggs. Salt and pepper to taste. I'd rather be able to convert vegetarian recipes that have it done for me I guess. I'm not 100% vegan. Well, most of the time I am, simply because I feel it's healthier and dairy in any perceptible amount makes me sick. I'm squeamish about eggs too.
