The " official " name was Dry Pototoes with Garlic and Ginger, we now just call this Spicy Potatoes: 1 lb. 6 oz. potatoes (about 5 medium) A piece of fresh ginger about 2 x 1 x 1 inches, peeled and coarsely chopped 3 cloves garlic, peeled 3 T. water 1/2 t. ground turmeric 1 t. salt 1/2 t. cayeene pepper (this is too hot, for me, I use about 1/4 t.) 5 T. veg oil 1 t. whole fennel seeds -Boil the potatoes in their skins. drain and let cool completely. Peel and cut into 3/4 - 1 inch cubes. -Put ginger, water, turmeric, salt, and cayenne into a food processor or blender. Blend into a paste. -Heat the oil in a large, preferably non-stick frying pan over medium flame. When hot, put in fennel seeds. Let them fizzle for a few seconds. Put in the garlic-ginger paste. Stir and fry for 2 minutes. Put in the potatoes. Stir and fry for 5-7 minutes over medium high flame or until the potatoes have a nice golden brown crust on them. I'm thinking that in larger households this might be a good way of dealing with left-over spuds - or, to save time, do what a cyberfriend of mine once suggested on her list: always cook extra potatoes, in jackets or not, boiled or baked, so that you have them ready for potato salads and hot dishes like this ;=) Yes yes I know it's always nicer to use freshly cooked ones, but sometimes when people are busy and coming home to cook a meal after work . . . ;=) Shall put it up in the Files. My McAfee Spamkiller had a problem and I had to download it again and set it up - this meant I lost all my personal email filters and so some of your emails got " killed " and sent harsh responses.
