Guest guest Posted June 8, 2004 Report Share Posted June 8, 2004 Corrected version of the response to eye-poppin eggs :=) follows: The Eye-Poppin eggs recipe sounds good and is close to another favourite ;= ) For a light meal we bake, in individual casseroles, lightly oiled, two eggs per person, sunnyside up (not broken or scrambled), topped with finely chopped garlic, ginger (optional), chilies (not optional - it'd taste altogether different) to taste, topped with cilantro/coriander leaves to lightly cover, topped with shredded vegan cheez of choice (again enough to lightly cover), topped with thinly sliced tomatoes, topped with a topping of crumbs and faux parmesan or nuts and crumbs and nutritional yeast mix, drizzle of olive oil. Salt and pepper to taste between layers. Or not. Bake at 325 until the eggs are set, around 20 minutes, depending on the depth of the layers of food and the age of the eggs and the temp of the eggs ;=) Serve with crusty bread, flat bread, or tortillas, with or without salad ;=) Quote Link to comment Share on other sites More sharing options...
