Guest guest Posted June 14, 2004 Report Share Posted June 14, 2004 CAULIFLOWER WITH CHILIES AND GINGER (VEGAN) This is a favourite here ;=) The degree of `heat' is up to you - the ginger alone might do it for some; others will want those red-hot chillies! 1 or 2 Tbsp cooking oil 1 small head of cauliflower, cut into florets 4 or 5 rounds of ginger root, cut into thin strips 2 or 3 chopped green chilies (optional but good) 2 or 3 garlic cloves, crushed and chopped 2 handfuls of cilantro/coriander leaves, chopped juice of 1 small lime salt and pepper to taste Saute the ginger, garlic and chilies in the oil for a few seconds over medium heat, being careful not to burn the garlic. Add the cauliflower florets (and salt if used), raise the heat to medium-high and stir for a couple of minutes to coat the cauliflower in the spiced oil. Then add around 1/3 cup of water and cover * immediately* to let the cauliflower steam for about three minutes - it should be *just* cooked through, not soft. Remove lid and let any extra water evaporate, then stir in most of the cilantro/coriander leaves (saving a little for garnish) and lime juice and salt and pepper to taste. Guest guest Posted April 30, 2009 Report Share Posted April 30, 2009 Nice thing about cauliflower is that not only does it taste wonderful, have great texture, look great in whatever recipe one uses for it, but it is also nearly guilt-free eating, healthy because it's a crucifer, and almost entirely without waste. And oh yeah, it's good raw or cooked! I plan to put a list of high pesticide load produce and lower pesticide load produce on my Stubblejumpers website, when I get two spare minutes to rub together.
