It always but always turns out perfectly ;=) The recipe can be altered to suit what you have, but it is undeniable that it is at its best when made according to the directions here ;=) Flavours, textures, colours, etc. are nicely balanced. You may of course want to use more curry powder (your own or a good commercial product), add another green chilli or two or add some cayenne to the recipe, as we do. [This comes from _Vegetarian Cooking_ (The Australian Women's Weekly: Home Library, 1989), p. 48.] SPICY GARBANZO AND VEGETABLE HOT POT 2 Tbsp oil 1 medium onion, chopped 1 clove garlic, crushed 1 Tbsp curry powder 1 1 tsp ground cumin 1/4 tsp ground cardamom 1/4 tsp ground nutmet pinch grounc allspice 1 small fresh red chilli, finely chopped 1 Tbsp finely chopped fresh ginger 1 Tbsp wholemeal plain flour 2 cups water 1 large vegetable stock cube, crumbled 1 medium carrots, chopped 1 medium potatoes, chopped 1/2 small cauliflower, chopped 250 g green beans, chopped 1 medium apple, peeled, chopped 425 g garbanzos, drained 200g carton plain yoghurt 1 Tbsp chopped fresh coriander 1/4 cup chopped roasted cashew nuts Heat oil in large saucepan, add onion, stir over medium heat for about two minutes (or mincrowave on HIGH for about 3 minutes) or until onion is soft. Add garlic, curry powder, spices, chilli and ginger, stir over medium heat for 1 minute (or microwave on HIGH for 1 minute). Stir in flour, stir over high heat for 1 minute (or microwave on HIGH for 1 minute). Remove from heat, gradually stir in combined water and stock cube, stir over high heat (or microwave on HIGH) until mixture boils and thickens slightly. Add carrots, potatoes, cauliflower and beans, cover, simmer for about 10 minutes (or microwave on HIGH for about 8 minutes) or until vegetables are tender. Add apple, garbanzos, yoghurt and coriander, stir over medium heat until heated through. Sprinkle with nuts before serving. SERVES 4. Enjoy. gf (I am putting it in the Files section now.)
