It's especially wonderful (and eye- opening) on a Sunday morning after a late Saturday night. Ingredients: Flour tortillas (generally, one per person unless really hungry) Cooked hash browns (you can prepare from scratch or use frozen; use country-style, or cubed, hash browns -- not shredded) Scrambled eggs (vegans can omit, or prepare a tofu scramble) Cooked vegetarian sausage patties, diced Grated cheese (Cheddar is traditional in NM cookery; use what you like. Vegans can use soy or tofu cheese.) A batch of New Mexican red chile, heated (see separate recipe previously posted) Instructions: Prepare hash browns. While cooking, scramble eggs or tofu. Heat veggie sausage and dice. Warm flour tortillas in large ungreased cast iron or non-stick skillet. Put a cooked tortilla on a plate. Fill with potatoes, scramble, and sausage. Sprinkle on cheese.
