It does bother me on ethical grounds, which is why I avoid eating eggs, though I don't do it religiously. I would never cook and eat a whole egg, for example, but I do let it slide every now and then with baked goods, and sometimes with Quorn. But I do avoid eggs and dairy when I can - I agree, baked goods are a problem especially when you're eating them somewhere else but in your own home. Bethie Well, I'm not vegan, so someone who is vegan should answer ;=) Please!!!! But since it was my remarks that prompted your query, I'll just say that my understanding is that when you buy baked goods to take home you read the ingredients label very very carefully, and when you are out you either avoid them or *ask* about them. I understand, for example, that some of the quick service food outlets - Subway I think is one - has a choice of breads for your sandwiches and can tell you which ones are vegan. Others might too. Guest guest Posted June 28, 2004 Report Share Posted June 28, 2004 In general, use replacements for dairy and egg when you bake: Soy milk or nut milk instead of milk, tofu, ground flax mixed with water or a homemade or storebought starch egg substitute for eggs. Here are a few recipes (not spicy): Chocolate Cake Ingredients: 2 cups brown sugar 1 3/4 cups whole wheat flour 3/4 cup cocoa 1 1/2 tsp. baking soda 1 tsp. salt 1 cup soya milk 1/2 cup vegetable oil 2 tsp. vanilla extract 1 cup boiling water Directions: Combine dry ingredients. Add milk, oil, vanilla and beat for 2 minutes. Stir in boiling water. Pour into pan 9 inch square cake pan. Bake 35-40 minutes at 350 F. ============ Crazy Chocolate Cake 3 cups flour 2 cups sugar 2 t. baking soda 1 t. salt 1/2 cup cocoa 3/4 cup oil 1 t. vanilla 2 T. vinegar 2 cups water Mix the dry ingredients and then add the wet ones, and mix until smooth. Pour into a 9 X 13 cake pan. Bake at 350 degrees for 20-25 minutes, or until a toothpick comes out clean. Cool. Ice in pan with favorite frosting. ============ White Cake 1 1/2 cups flour 3/4 cup turbinado sugar 2 tsp. baking powder 1/4 tsp. salt 3/4 cup soy, almond, or rice milk 2 tsp. vanilla (or lemon) extract 1/4 cup oil 2 Tbs. corn starch Preheat oven to 350. Grease a cake pan. In a large mixing bowl, mix together flour, turbinado sugar, baking powder, and salt. In a seperate bowl, combine remaining ingredients, and add to flour mixture.
