Guest guest Posted June 28, 2004 Report Share Posted June 28, 2004 hi, I figure its about time to kick down a recipe. this happens to also be the first one I sent to the feral group. if any of you are familiar with my recipes, I do not use fixed amounts and leave things open to personal taste except for main ingredients of course. so here goes, and oh yeah you gotta use a charcoal bbq cause gas just wont do lol 1 16ounce can bearitos spicy refried beans 1 cup uncle bens instant brown rice with water according to package directions 8-15 green anaheim chiles flour tortillas cilantro(optional) 1-3 tblsp pico pica hot sauce 1-2 tblsp butter or margarine ok get charcoal going. I prefer using the charcoal tower form of lighter where you put the charcoal on top and wadded up newspaper underneath cause no lighter fluid is involved so you dont get any of that nasty tast or foul up the air but dont worry you still get to smoke out the neighbors lol. this method also works very well. so while your charcoal is igniting, start with your bean rice mixture,boil the water and add the butter or margarine. also add the hot sauce. when it comes to a boil put in your rice and cook it down. in the last few minutes of the rice cooking add some cilantro if you want to. after the rice is done, add the refried beans and after they are mixed in, you can add more cilantro if you want. by this time, your charcoal should be ready to cook. you are gonna need to use hot tongs to turn the chiles. you want too roast the chiles to the point that the skin is definitely evenly burnt yet not too blackened or there wont be much flesh left. there is alot of turning involved but the whole thing is actually done quite quickly. there will still be a big fire left when you are done and you might wanna cook some tofu dogs to keep your hungry guests satisfied til your burritos done. let the peppers cool a little,if roasted right the skin should easily seperate from the pepper. after you do that open the peppers and remove the seeds and insides. then chop up the peppers into small bite size pieces but you dont have to be exacting or anything like that. then stir the peppers into your bean and rice mixture. then you heat up the tortillas to soften them and then put the mixture into the flour tortillas and make your burritos. you can either eat the burritos plain or you can fry them up. its up to you. hope you enjoy. stay cool, Dave Quote Link to comment Share on other sites More sharing options...
