I'm hoping other folks might have some good vegetarian sandwich recipes to share too. In addition to taking them along to family events/BBQs, my hubby and I eat sandwiches at home when it's too hot to do much cooking or when we need a quick/easy meal. I don't remember the name of the group, nor all the specifics of the recipe, but here is the way I make it. I use: Two pieces of whole wheat bread OR pita bread (or really any bread option) Hummus Sprouts Mustard Pesto Take the bread. You can toast it, or microwave it for ten-fifteen seconds, or eat it cold. Spread hummus on the bread first. (I prefer two open-faced sandwiches, instead of a regular sandwich) Pesto, mustard, and sprouts can go on next, in any order. Because I bought sundried tomato pesto (yum!), I don't always use the mustard. I'm sure there a million variations on a theme here. Lots of types of hummus, mustard, pesto, AND sprouts, not to mention breads. For some reason, this combo is incredible. I use lots of sprouts, because I can always use more vegetables in my diet. I also try to find those new-fangled sprouts which are crossbread with radishes (I think I saw some crossed with onions as well)...the flavor is there! For spice, of course there's spicy mustard, or even better, there are some spicy hummus flavors out there as well, at least in this region. Anyway, if I ever find that group again, I will be sure to credit it. I'm grateful for the recipe. Easy, delicious, nutritious, and the ingredients can be made to last for several meals. Isn't it amazing how a small thing like that can make *all* the difference in a sandwich!!! Sounds great. Outta sprouts in this house right now, sadly.
