[Recipe] Spicy UnEgg Salad Sandwiches

Ingredients:

 

1 (14 oz.) package firm tofu, rinsed and drained

1/2 cup mayonnaise (regular or vegan)

1 teaspoon fresh lemon juice

1 teaspoon ground turmeric

1 teaspoon Chinese hot prepared mustard, or to taste

2 celery stalks, finely chopped

1 pinch red pepper flakes, or to taste

Salt and pepper to taste

 

Bread

Lettuce

Sliced tomatoes

 

Preparation:

 

Finely mash tofu with a fork in a bowl, then let drain in a sieve set over

another bowl,

about 15 minutes (discard liquid).

 

While tofu drains, whisk together mayonnaise, lemon juice, turmeric, and mustard

in bowl,

then stir in tofu, celery, red pepper, salt, and pepper.

 

Toast bread, if desired. Layer on UnEgg Salad, lettuce, and tomatoes.
