Guest guest
Nasi Goreng (Fried Rice) Yield: 2 servings Ingredients * 4 c Long-grain rice, cooked and cooled completely * 8 Shallots or 1 small onion * 4 Red chilis or 2 tsp chili -powder and 2 tsp paprika * 4 tbsp Vegetable oil * Salt * 2 tsp Sweet soy sauce * 2 tsp Tomato ketchup Slice the shallots or onion, seed and slice the chili (or pound the shallots and chili together in a mortar). Heat the oil in a wok, saute the shallots and chili for a minute or two. Season with salt, soy sauce, and tomato ketchup. Add all the rice, and stir continuously until it is well heated: this will take 5 to 8 minutes. Serve in a large dish, generously garnished with sliced cucumber, tomatoes, and crispy fried onions.
