Guest guest Posted August 6, 2004 Report Share Posted August 6, 2004 14 oz. firm tofu, strained and cut into 1 & #8260;2 " cubes 2 Tbs. soy sauce 2-4 cloves garlic, finely minced 1 1 " piece fresh ginger, finely minced 1-2 Tbs. Spicy Chili Sauce 1 Tbs. vegetable oil 1 medium sized onion, cut into 1 & #8260;2 " chunks 1 green bell pepper, cut into 1 & #8260;2 " chunks 1 red bell pepper, cut into 1 & #8260;2 " chunks 1 (8 oz.) small can pineapple pieces, drained 4-6 Tbs.Light Plum Spring Roll Sauce While you are cutting up the vegetables, place the tofu in a small bowl with the soy sauce, garlic, ginger and spicy chili sauce to marinate. Heat the oil in a large wok or skillet over medium high heat. Add the onion and stir-fry for 3 minutes. Add the tofu and stir- fry for 3-5 minutes. Add the green and red peppers, the pineapple and the light plum spring roll sauce and stir-fry for an additional 5 minutes. Serves 4.
