I've included a recipe for paneer in case you live somewhere where it is hard to find. It doesn't really taste the same, but is still a good substitute. Enjoy, Rebecca MATTER PANEER 1/4 c. ghee 1 pkg. paneer cheese (or recipe below) 1 onion, chopped 5 cloves garlic, chopped 8 oz. tomato sauce 1 can diced tomatoes 2 t. ginger 1 T. tumeric 1 T. cumin 1 T. garam masala 8 oz. fresh mushrooms 1 1/2 cups green peas (frozen are fine) Basmati rice, cooked (Adjust spices to taste) Brown paneer in ghee and set aside. Saute onions and garlic until translucent. Add tomato sauce, tomatoes, and spices and simmer five to ten minutes. Add mushrooms and peas and cook until tender. Add paneer and simmer five to ten minutes longer until flavors blend. Serve over basmati rice. IMITATION PANEER CHEESE Spread 1 LB RICOTTA CHEESE in an 8 " buttered baking pan. Cook uncovered at 350 degrees F for 1-2 hours until firm and very lightly browned on top. Also, if you're lazy like me (*grin*) you can substitute tofu for paneer. (bad, I know, but the texture's the same, and it's a decent substitute when you can't get it or don't feel like making it....oh, and if you do the spinich thing, you need to process it, but only process it till it's about half processed...I made the mistake of pureeing all of it, and, while it tasted the same, just wasn't that good...
