Guest guest Posted August 7, 2004 Report Share Posted August 7, 2004 4 Pepper Vegetable Soup This very spicy soup is a variation of " Basic Vegetable Stock " from the book, " Vegan Planet " 1T Olive Oil 1 Large Yellow Onion, chopped 2 Ribs of Celery, chopped 2 Medium Carrots, chopped 8 Cups of Water 2 Cloves of Garlic, crushed 1/2 Cup Fresh Parsley, chopped 1 Large Bay Leaf 1T Tamari or Soy Sauce 1 1/2 t Black Peppercorns, left whole 1 t Crushed Red Pepper Flakes 1 t Habanero Powder (I used Apple Smoked Red Savina Powder) 1/2 Medium Red or Green Pepper, chopped A 14oz. Can Diced Tomatoes 3 Medium Red Potatoes, quartered with skins left on 1 Cup Frozen Mixed Vegetables (your choice) Heat the olive oil in a large stock pot over medium heat. Add onion, celery, pepper, and carrots. Cover and cook for 5 minutes. Add remaining ingredients except the tomatoes and frozen mixed vegetable and salt to taste. Bring to a boil, then reduce heat to med-low and simmer uncovered for 1 hour. Add tomatoes and frozen mixed vegetables and cook for 5 minutes. Skim off the fat if you feel the need to do so. Enjoy! I like the soup recipe very much - we love anything but anything that has tomatoes and chillies and onions in it - I swear my dh could live on tomatoes given half a chance ;=) Shall be trying it before too long - and thanks also for uploading it to the files!
