A friend gave em a ton of cucumbers from her garden, and granted a cucumber can be a girl's best friend.... well I am not going to go there LOL... anway... looking for some other creative uses of the lovely cucumber! I know it sounds pretty standard, but always tastes good!!! I also make a good skin lotion with cucumbers, they are excellent for the skin. Have you ever tried something like that? Cucumbers have a enzyme in them called erepsin which helps to digest proteins. Here is a great recipe for a yogurt cucumber dressing that I make sometimes.... Finely grate or puree two cucumbers Take two cups of yogurt and place in a mixing bowl and add cucumbers, then add the following... 1 tablespoon tarragon vinegar\lemon juice 1 tabelspoon olive oil freshly chopped dill salt and pepper to taste Oh one other thing for those of youu who do eat cucumbers, the reason they spray them with wax is to retard spoilage because cucumbers spoil very quickly. Petroleum product in your intestines is not a good thing!! , Cucumbers have a good deal of Vitamin A, but it is in the skin, so if you peel them to eat them you loose that benefit, so always get organic cucumbers, or at least ones who have not been sprayed whenever you can!! , " Colleen M.
