Guest guest Posted August 9, 2004 Report Share Posted August 9, 2004 Toasted Coconut Custard Ingredients a.. 1 cup low-fat (1%) milk b.. 1/3 cup instant nonfat dry milk powder c.. 2 Tbsp sugar d.. 1 tsp coconut extract e.. 2 eggs f.. 1/2 tsp vanilla extract g.. 4 tsp shredded coconut, toasted until golden Procedure 1.. Preheat the oven to 350 F; spray four 6-oz custard cups with nonstick cooking spray. 2.. In a medium saucepan over medium-high heat, combine milk, dry milk, sugar and coconut extract; cook stirring frequently, until the mixture boils and the sugar dissolves, 3-4 minutes. 3.. In a medium bowl, whisk the eggs until light; gradually whisk in the hot milk mixture and vanilla. Pour into the custard cups; sprinkle with the coconut. Place the cups in a shallow pan; pour hot (not boiling) water halfway up the sides of the pan. Bake until the custards are set and a knife inserted comes out clean, 20-25 minutes.
