Quick Mushroom Curry (Chaiu Ko Tarkari) Ingredients 1 lb mushroom, sliced 1/2 cup chopped cashews 1 onion, chopped 1 tomato, chopped 1 teaspoon vegetable oil 1 teaspoon garlic garam masala, hot pepper, turmeric and salt to taste Preparation 1 Heat the oil, add spices and garlic 2 Saute onions till slightly golden brown and then add tomatoes. Heat for a while. 3 Add mushrooms and nuts. Stir fry for a few minutes. 4 Add water just enough water to keep from sticking and steam until the muchrooms are done to your taste. 5 Serve with rice Nepali Cucumber Salad by Kabita Kami, Ohio Ingredients 1 big cucumber 1/2 red onion garlic to taste pepper to taste 1 teaspoon oil few cilantro leaves to taste lemon juice to taste salt to taste Preparation 1 Cut cucumber in thin pieces 2 Add oil.
