Guest guest Posted August 13, 2004 Report Share Posted August 13, 2004 jamaican jerk seasoning in the dry form is only spices ground together,, in jamaica they do use it on meat as a rub,, im not sure about whats in the wet jerk seasoning the consistinece of it when done is like steak sauce,, sorta on the thick side. i use one regular size bottle of ketchup about 28 oz. and about 1/2 quart of vinegar when i start,, and about 1 cup of brown sugar. The curry powder i use is blue mountain brand from jamacia.. some times i buy whole spices and ground them up in a pestal and morter for a fresher taste. my husband reminded me that i do put frsh thyme in it when i have,, that has to be fresh for the best flavor.. my husband said that the jerk seasoning orginated with the Rasts's in Jamacia,, and with there way of life and religion they don't eat any kind of meats only what they can grow in the earth there,, there diet is strictly vegetarian at all times,, they feel that any thing that doesnt come from the earth can contanimate the body and your body is a vesel to be holy.
