Saute a chopped onion in a lot of extra virgin olive oil. When soft, toss in as much minced garlic as you want, then toss in halved cherry tomatoes. Warm through. Add salt, pepper & shredded fresh basil. Serve immediately. Mmmmmmmmmmmmmm!! Simple & yummy. Who needs more? Which reminds me of a FABULOUS 'summer sauce' from one of my cookbooks...*hang on a sec*.......Sally Griffith's Great Pasta Sauces ( http://www.amazon.com/exec/obidos/tg/detail/-/0847818721/qid=1092955028/sr=1-1/r\ ef=sr_1_1/102-0948634-3150562?v=glance & s=books) 2 1/4 lbs ripe plum tomatoes, peeled, seeded & chopped 6TB extra virgin olive oil 1/2TB chopped fresh oregano 2TB chopped fresh basil 2TB chopped fresh parsley 2TB chopped black olives 2 cloves garlic, peeled & minced 1/2tsp sugar salt & pepper Combine all ingredients, mix well & let sit at room temp 2 hours. Guest guest Posted August 20, 2004 Report Share Posted August 20, 2004 I am so glad you sent this because i just brought in a HUGE baking tray piled high with cherry tomatoes from our backyard and thought - now what the heck am I supposed to do with all these? I also have a huge bowl full of beefsteak and roma tomatoes from our plants so do you think i can just substitute some of those for the plum tomatoes in your recipe? I'm going to get a heap load of fresh herbs at farmers market tomorrow and want to make that sauce! I'm just getting ready to make an apple pie with our granny smith apples from the tree in the back.
