Its Plant Family is Solanaceae (Solanum Melongena.) There are three India popular methods: 1.The eggplant is marinated in turmeric powder, then deep fried in mustered oil, some spices (powder is sprayed and used. 2.Egglplant is marinated in salt, sauteed, then simmered in Yugurt. 3. Third and most popular method is a large sized eggplant is roasted over flames, then messed with chopped ginger, green chillies, and fresh corinder leaves. In two spoonful oil fry 2- 3 chopped onions till they become light brown, add 2-3 chopped tommatoes and cook the messed eggplant for two three minutes. Put some spices powder and enjoy. Characterstics: The fruit varies in shape from the large and spherical to the elongated and lemon sized, and is purple or white in color. 1. In Indian Ayurvedic medicine eggplant is precribed as a heart tonic, 2.An appetite stimulant, 3. A mild laxative and diuretic. 4. It is also considered to help with dullness of vision 5.The external application of its backed pulp as a cure for inflammations and swellings 6.The white eggplant is good for people suffering from diabetes.
