You can add a few whole cherry tomatoes if you like, just before baking, but I usually don't. Au Gratin Peas and Chiles, lacto-veg ~~~~~~~~~~~~~~~~~~ 1 sm onion, chopped 2 Tbsp butter 2 Tbsp flour 1 c milk 3 c frozen peas, thawed at least 1/2 c chopped green chiles, any mild flavorful type (anything from Anaheims to jalapeños) Plenty of black pepper (don't hold back ) 1/2 tsp tarragon, basil, thyme or fresh (not dried!) rosemary-- I especially like half tarragon, half thyme 1/2 c seasoned bread crumbs 2 c Cheddar cheese, shredded Salt if desired Melt butter in a skillet, add onion and chiles and sauté until tender. Sprinkle with flour and stir until thickened. Add milk and seasonings and stir till mixture thickens again. You may need to add more milk or flour to achieve a creamy consistency. Add more salt if desired, but remember that the cheese will add a good deal. Place peas in a lightly greased or Pammed baking dish. Pour sauce mixture over peas. Sprinkle with bread crumbs and cheese and bake at 350F for 35 minutes. Serve with iced tea and an apple salad.
