I'm warning you, if you don't point us to some of your favourite recipes - or post some new ones - you'll force me to dig out my old moth-eaten chilli non carne recipe - and what I don't know about Mexican or Tex-Mex would fill volumes! Guest guest Posted September 3, 2004 Report Share Posted September 3, 2004 Stuffed Jalapenos..... orig from the Toronto Star. 10 jalapenos, cleaned, cut in half lengthwise, seeded and de-veined 1/2 cup shredded cheddar cheese 1/4 cup cream cheese, softened 1/4 cup salsa 3/4 cup fine dry breadcrumbs (divided) 2 Tblspns fresh parsley 2 " melted butter salt to taste N.B. Some jalapenos are milder than others. Preheat oven to 375F. Blend all of the cheeses, the salsa, and 1/4 cup of the breadcrumbs together. Smear this into peppers and place each in an 8 " square pan. Mix remaining breadcrumbs and parsley and butter together and sprinkle over the peppers. Sprinkle lightly with salt and bake 20 minutes till just browning.
