Huevos Rancheros Los Californeos Huevos Rancheros Los Californeos serves 2 2 tablespoons olive oil 1 medium size onion, chopped 4 - 6 cloves of garlic, minced 1 small Serrano chili, minced 1/2 a red bell pepper, seeded and cut into very thin julienne salt and fresh coarse ground black pepper to taste 1/4 cup chopped cilantro or to taste 4 large eggs, lightly beaten 1/2 cup grated cheese of choice salsa of choice guacamole grated cheese crema or sour cream Heat the olive oil in a heavy skillet and gently sauté the onion, garlic, chili and pepper till all are soft and before beginning to brown, remove from the heat, season to taste with salt and pepper, stir in the cilantro and set aside. Lightly oil a large heavy skillet or omelet pan and heat. Gently pour in the beaten eggs and cook over a moderate heat until the bottom begins to set. Sprinkle the surface with the grated cheese and lightly agitate the eggs with the back of a fork until custard like. Sprinkle the surface with the sautéed vegetables, leave cook for another minute or so, then fold in half. When done to your liking, slide out onto a heated serving plate. Cover generously with salsa of choice. Sprinkle with a bit more cheese, add a dollop of guacamole and crema or sour cream and garnish with a sprig of fresh cilantro.
