I am particularly interested in Indonesian tempeh, not that rubbery stuff that is sold in the supermarkets in the US. I have developed a very low-cost home incubator that can produce 2-3 pounds of tempeh in a 24 hour period. I'd be glad to share this design with the group. I also grow asian herbs, chillis and prepare some of my favorite Indonesian recipes using tempeh, herbs and spices at home. Glad to share any of these also... Guest guest Posted September 9, 2004 Report Share Posted September 9, 2004 Rain, I haven't considered miso; it's just too easy to get good miso at the local Asian market, but tempeh is another matter. I am in the process of putting together a PDF on my tempeh incubator. Please give me a few weeks. It will have photos, assembly instructions, operation, etc. I'll post to the files section once it is done. But let me just give a general overview for now. My incubator is the 'water-bath' type. I use a medium size plastic ice chest filled nearly to the top with water. Inside there is a rack that holds a stainless steel pan partially submerged in the water. I use an aquarium heater to maintain the correct temperature for the the tempeh innoculum, a bubbler to keep the air oxygenated with the cover down, and a cheap electronic thermometer to monitor the temperature from the outside. It sounds complicated, but I bought everything at Wal Mart and Petco to build the thing, cost around $50. And it works great! I'll try taking a digital photo tonight and post to the photo section for all to see.
